This week was a bit hectic so I didn't have a chance to post my normal weekly menu on Monday. At least I am posting it at some point - ha ha!
Sunday: Mushroom Bolognese from Cooking Light's October issue. This was really good if you like mushrooms! There are 8 cups of mushrooms, so it's worth it to run by Costco if you plan to make this recipe. We had tons of leftovers which were perfect for lunches this past week!
Monday: Mushroom and Provolone Patty Melts also from the October issue of CL. These were good, but I didn't exactly follow the recipe. I added roasted garlic and worcestershire sauce to the ground sirloin and I omitted the flour and beer and instead added dijon mustard to the onion/mushroom mixture. I also buttered the bread instead of using cooking spray. So, these weren't exactly light!
Tuesday: It was my birthday so we went out to eat! :-)
Thursday: Bourbon BBQ Ribs from Southern Living with butternut squash and baked beans. These ribs may have been some of the best I have had. They were absolutely delicious. The technique was easy and the results were wonderful. I will definitely use this technique going forward, and I will probably try using different sauces.
