Menu Monday

I am in town again this week - yay! Below are the recipes that I will be trying this week.


Monday: Chicken Marsala Tetrazzini - this recipe is from this month's Southern Living Magazine

Tuesday: Pot Roast with caramelized onions and mashed potatoes

Wednesday: Bourbon glazed pork chops, broccoli, and rice pilaf

1½ cups firmly packed brown sugar
⅔ cup Dijon mustard
⅓ cup soy sauce
⅓ cup bourbon (Coke may be substituted)
1 teaspoon salt
1 teaspoon pepper
6 (½ inch thick) bone-in pork chops

Stir together first 6 ingredients in a large bowl. Place half of the sugar mixture in shallow dish or large zip top plastic bag; add pork chops. Cover or seal, and chill 30 minutes, turning once. Remove pork from marinade, discarding marinade.

Grill pork in grill skillet over medium high heat about 6-8 minutes or until done, turning once.

Bring remaining sugar mixture to a boil in a small saucepan, and cook, stirring occasionally, 2 minutes. Pour over chops before serving.

Thursday: Takeout!
