I finally received the cookbooks that I posted about a week or so ago. I have thumbed through them and cooked several recipes and I love them! The recipes are all really quick and easy and perfect for after work.
So far we have had:
Lemon Red Snapper with Herbed Butter (I used halibut and parsley & roasted garlic to make the herb butter). Thomas and I both really liked this.
Shrimp with Capers, Garlic, and Rice - I made this for friends using 13 count shrimp
Seared Pork Tenderloin Medallions with Shallot-Mushroom Pan Gravy and Balsamic Green Beans - This was really good, especially if you like mushrooms.
They were all very good and easy to make. These cookbooks are definitely keepers!
